Grapes and Grapes: 40% Inzolia – 30% Grillo – 30% Catarratto
Vinification:
The bunches harvested during the night are refrigerated to preserve the aromas, before the crushing and destemming operations. The three varieties ripen in different periods, ferment and refine in different ways: the Grillo and the Catarratto undergo a short cold maceration (4-6 hours), then ferment for 18 days in new French oak barriques where they remain on their lees for eight months during which they complete the malolactic fermentation. Inzolia, on the other hand, ferments and ages in stainless steel tanks. The wine is then blended and bottled and remains in the bottle for a further 10 months before being released on the market.

Description:
The nose reveals toasted notes, citrus fruits, exotic fruits and light buttery sensations.
On the palate it is sapid and fresh, long and persistent. Pleasant from the start, it reveals the great potential for an excellent future evolution.
Food-Wine Pairings: Perfect with smoked fish, first courses of Sicilian cuisine, pasta alla Norma, mushroom flans, sauced and elaborate white meats. Semi-mature cheeses.
